Hide 'n' Seek - Higgins Lake '07

Fall is in the air, and today has been a wonderful weekday. My house is messy, my to do list is undone and I need to take the trash out. Confused? Me, too. The undone list is not exactly what has made my day wonderful. No, there are many things I should be doing, but sometimes I just need to relax and reflect on the blessings of the day.

I had a lovely lunch with my dear friend Kaleena and her precious baby girl, Mckynzye. It was refreshing to be around these two ladies who were happy and calm and full of life. I wish lunch was more than an hour long. Definite highlight to my day!

My girl Bonnie did all of her tricks on cue after our walk this evening. We've been working on laying down on cold surfaces. Sweet sassy thing used to only lay down on carpet or blankets. You'd think she was an only child...oh wait. Scratch that. Anyway, sister is finally laying down almost anywhere for those crazy lamb treats. Two thumbs way up for Bud the super trainer's tips!

Also, can I say "thank you Jesus" that all the fall premier episodes are online for me to peruse at me leisure? I was sincerely bummed that I missed the NCIS premier. Have no fear, the internet is here! Blogging and watching NCIS is the perfect combo! Oh Gibbs, you are the dreamiest older guy around! It's okay, Mr. Schalk understands.
Final fun thing to make my day? Mr. Schalk got out of class early tonight! With that, you will have to pardon me while I make this post short. I have a hubby and a puppy to go attack with kisses.

A Short Story

One time a group of Lichtenstein bandits came storming across the countryside to the little village of Neine to steal all the fair maidens and chocolate chip cookies in the land. They had quite a taste for cookies and no way to make their own. For you see, chocolate was banned in their country. Along with mascarpone cream. The fair maidens? Well, who could deny stealing fair maidens who were also fabulous bakers?

"Sir, sir!" said one such fair maiden, "You must save our village from the angry Lichtenstein bandits. They are bitter without chocolate and sweet maiden voices to sooth them after a hard days work in the field." "Ah yes, my fair lady," said the Soldier, "your cookies are delicious and none can compare." "I shall send my strongest lad and his trusty horse, Hourglass, to your aid."
The young soldier was sent out on his bandit beatin' horse, Hourglass, to protect the fair maidens and chocolate chip cookies of the village of Neine. He fought tirelessly with his fellow soldiers until all of the cookies and maidens were safe and sounds in their bakeries. The soldiers successfully fought off the Lichtenstein bandits and sent them home to their trout pies and pet goats.

Pineapple Dessert Bliss: A Photo Assemblage

Earlier this month, Mr. Schalk and I spent the weekend in Michigan with the fam. We ate lots of good food and even enjoyed a special dessert for our last summer evening up north. When I say special I really mean sit down and transport yourself to Hawaii with soft warm breezes, light music and the most delectable tropical dessert you've ever experienced.

Did you know I love dessert? As in, I could probably live on desserts and veggies for the rest of my life. Also, bacon, must have bacon. But, that's a post all in its own and for another day.

Where was I? Ah, yes, the anticipated lovely dessert post. My mother-in-law is a wonderful cook and often draws her recipes from Bon Appetit. This particular treat comes from a September 1997 issue.

Pineapple-Cocunut Napoleons with Mascarpone Cream and Pineapple Syrup.

Oh my goodness! Isn't that name delightful? The cookies, or tuiles if you want to be all fancy pants, were made a day ahead of time. The syrup and cream were made earlier in the day.

Now is the part of the post when I must confess.

I did not actually make these.

I plan make these someday for a special event. They are saved in my recipe files. I am the queen of good intentions. However, for this inaugural visit to pineapple bliss land Rosemary, Mr. Schalk's mom, made the dessert. I just assembled. And took the following photos along with Mr. Schalk who helped. He also helped take the dessert outside to the family and make coffee. Coffee is a perfect accompaniment to this sweetness.

Mascarpone cream is banned in some countries because of the evil it does to the hips of those who consume it. Well...it should be. But even that would not have stopped me from indulging. I'm a rule follower by nature, but this mascarpone cream is divine and worthy of breaking the rules. The hypothetical non-existent rules.

So, here's how you assemble the beautiful little tropical napoleons.

Coconut cookie first.


Fresh pineapple ring next. Doesn't Rosemary cut lovely pineapple rings? Sweet Jesse I love pineapple!


Now cover up the ring with a LARGE mound of mascarpone cream. Be still my sugar lovin' heart, there's more! Lots more!


Another cookie on top. Then another dallop...or mound...of cream. Just do it, you know you want to. I won't tell.

Let's look at that up close.


Oh yes!



Put another pineapple ring on top and you're almost there!


A little more cream on top. Looks heavenly! But wait. It's missing something. Ahhhh yes....


Cardamom, cloves, cinnamon and some other interesting ingredients collide into a caramel-y complex syrup sweetness. Don't worry about the ingredients not feeling like they "fit" with each other. They do. Take my word for it. I've tasted heaven. It's called Pineapple-coconut blah blah BLISS!

Oh my goodness. I would give all the bacon in my fridge for this dessert to be in front of me right now. Even if it is banned in Liechtenstein.

Well, it could be.


Enjoy my friends! As you can tell by my smile, I am about to enjoy heaven on earth. Too bad it was 3 weeks ago. I must find a special occasion to make these again...for the first time.

sneak peak

I had all the good intentions in the world to post a lovely dessert recipe tonight. Then life took hold and so did a sudden urge to paint the living room. No worries. It was an absolutely blissful day of fall decorating with mr. schalk.

Now, it's late and I have a primed living room and no dessert post. Oh well, I'm sure my 3 readers won't mind too much. :) Stay tuned because I am going to post the recipe. Hopefully, it will be well worth the wait. All I can say is that I can still taste the sweet amazingness in my mouth and it's been at least 3 weeks since I ate it. Here is a sneak peak to what's in store.

fall bokeh

Miz Booshay is having a photo assignment over at Pioneer Woman. Fall bokeh at it's best. It's a fun way to see other people's photos/blogs/interests. I submitted this picture by Mr. Schalk because, well...look at it! Isn't it lovely? "Hello, mr. stem, you are quite cute sticking up in the glowing frosty morn." The bokeh is nice and soft and ethereal. Bokeh is how the camera captures the out of focus parts. That would be the not technical definition. Something in focus and something not - contrast makes the world go 'round. What? Yes, I'm tired, thanks for asking. Bokeh is great word, don't you think? This is the picture I submitted to the Flickr group.

vulnerable, take 1

Since we are on a music kick, the new David Crowder Band cd came out yesterday, Church Music. Oh dang, this is not your grammy's church music. I love hymns and even Elvis' gospel tunes (reminds me of listening to my grandma's records when I was little), but this is polar opposite. I'm pretty much thrilled about this album. Originally, I wanted it for the song, How He Loves. It's one of the most beautiful love songs I have ever heard.

This song was written by John Mark McMillan in 2005. I am sure the "original" is fantastic. This, however, is the first version I have heard. I don't know music terms. I just don't. You would have to ask Mr. Schalk for all things musically technical. But I know what sounds good. And David Crowder Band sounds good, especially on this song. The guitar, the build up, the evident heart tugging Spirit fed sincerity of his voice. Blows me away. My heart is open and thrilled to serve a risen Lord, a living Jesus, a sweet powerful amazing Father.

Of all the things swirling through my head this week, I am feeling a bit reflective. I have been thinking a lot about a conversation our small group had last night. It was after we watched a Rob Bell Nooma dvd called Tomato. The topic: life and death. The premise: Dying to live.

Did you know that food is the most nutritious right after it's been harvested? Tomatoes right when they are picked are the best for you. Right when they die. It's odd to realize that fruit and vegetables were living at one point. We harvest them for our nutrition. They die for our life. The things that are the most nutritious for us are those that were living at one point. Tomatoes versus Twinkies. Poor Twinkies, always get a bad rap.

This all comes around to the verse found in Luke 9:23-25 (NLT). Jesus says to his disciples,
“If any of you wants to be my follower, you must turn from your selfish ways, take up your cross daily, and follow me. If you try to hang on to your life, you will lose it. But if you give up your life for my sake, you will save it. And what do you benefit if you gain the whole world but are yourself lost or destroyed?"

We must deny ourselves to find our true freedom in Christ. How much is what I say to impress others? Or at the very least, to appear special or intelligent or funny or better? Christ is working on me. He needed me to hear this, to reflect to be changed. In fact, I saw this dvd twice in one week. Not by choice, but by purpose. God's purpose.

What does it mean to be vulnerable? To be exactly who God made me? Nothing more (boasting) and nothing less (denying my purpose)? It cannot be answered in one evening's post, but it can be thought about.

A purpose of this blog is for me to keep a journal. I don't expect others to find all of this interesting, but it is helpful for my brain to release. I think of these things and get so easily distracted. I am tired of being moved by Christ and distracted by Satan. I want to be on fire for my Savior. Alive in the truth. Coming back to posts like these helps me to stay focused on the Truth of Christ.

Readers are an added bonus. So, if I turn you away I am sorry. But this is me being vulnerable, being alive in Christ. Or learning to.

sweet friends & a giveaway!

Have you ever seen such a doll face? She is the sweet baby girl of our great friends, Eric & Lotte. I'm seriously melting over this girl. Sarah is saying, "Hey Daddy, why'd you put this silly diapy on my head?" I love this little sweet pea! Equally adorable is her twin bro, Jakob.

I could have watched this little guy knock the oh-so-big tower of fun down over and over again. They are the coolest (and shortest) friends ever! Sweet babies!

We were blessed to be able to spend time with this great family this weekend. We met them at church some years back. It seems like forever, but I suppose it's only been a few years. Oh, those chicken enchiLOTTEs were delish! I don't easily forget a good meal or good company. There's always plenty of both at the Roberstons. This weekend we got Jasmine and Taylor's Bakery! Mmmm, speak directly to my heart why dontcha! Did you know Eric and Lotte introduced us to Jasmine? Yep, it's true. We are eternally grateful! So are my hips.

Here is another great Sara!

Sara Groves is a sweet voice in the world. She declares God's goodness in beautiful notes and lyrics that are full of depth. Have you ever had a singer or group that touched your heart? My friend feels this way about Norah Jones. She listens to Norah every time she is down and needs picked up. Sara does it for me. She reminds me of God's goodness in every day situations, in struggles and in joys. Sara and I go way back. She came to our college when I was a freshman. She brought her keyboard, husband and a few others and played in our verrrry small student union. Then, a few years later she came to our chapel. A totally different experience and just as God filled. This teacher turned singer is filled with the Spirit and God's truth. I always feel a sense of renewed strength, joy and especially peace after listening to her.

The Painter

Isn't it wonderful to know that the world was created and is being sustained by someone larger than us? By a mighty mighty God who is creative, deeply loving and incredibly interesting. A Holy Father who delights in the fields, flowers and rivers He's created. My heart is deeply touched by the beauty He has surrounded us with. One just needs to look up to see paintings in the sky moving and changing from day to evening, from calm to stormy. Free gifts of love. Sweet Jesus, you're beauty overflows over the earth!

Can you imagine what heaven is going to be like?! My brain cannot even fathom the beauty that we will experience. I'm so excited!

Thank you Jesus for a gorgeous summer. The flowers were especially beautiful this year. Thank you for your displays of beauty and reminders of your awesome power and love. May I be still and hear your voice in the cool breezes and beautiful colors that autumn is sure to bring. And thank you for my bloggy friends. They are quite lovely, too!

seasons to remember

Fall is in the air. Do you smell it? The evenings have turned crisp right before my nose. I am a little sad that the summer of 2009 is almost over. It has been a memorable summer to say the least. However, it is approaching just that, a memory. One to be cherished and tucked away for reflection. No need to be too sad my friends. Fall is a beautiful time of the year. We have already established its crispness. There are also fun happenings such as pumpkin picking, cider at Conner Prairie, walks in the woods, and lets not forget the lovely fall decorations!

Mr. Schalk and I got married in September. It was not officially autumn, but one would have guessed it was by our outdoor celebration. It would take a special post to describe our wedding. I'm a bit too tired on this work night to give it its full justice. Let's just say it was very fitting for our personalities. Full of God's abundant blessings and not the least bit average. We had pie not cake. My sweet mama made my gorgeous dress. It was outdoors in God's beautiful landscape not a church. Although for the record, I love churches and weddings in them. Just not mine. There were many things that made it unique and lovely. I will have to elaborate soon. It is such a sweet memory.

I would love to hear your favorite memories from this summer or what you have planned for the fall. Photo excursions? Home projects? Learning to craft your own cider? Oh my goodness, that reminded me of apple donuts at Connor Prairie! Be still my sugar loving heart! I wake up super early on Saturdays just to get these fantastic creations. They run out quickly...especially if I'm in line. I know what you're thinking. Yes, you can freeze them and they are still delicious thawed out. Not quite as amazing and full of fall joy, but really good. Totally worth it. 98% wonderful.

an interesting spin

growing up


I found out last week that my favorite oldies station in town got bought out. This was a major blow to my car rides. I adore the oldies. They remind me of growing up in a big way. As in, my big sister would not let me listen to anything but oldies for the first 10 years of my life. Basically, until she could drive and bossing me around took second fiddle to having a life of her own. It's okay, I'm not bitter. hehe

In truth, I was a little bitter at the time, but now I think it's funny. Now, I am grateful to know all of these great 50's and 60's songs by heart. They are my comfort and put me in a great mood. Insta-joy makers! The Shirelles, the Tempations, the Beach Boys. Did I ever tell you about the time I saw the Beach Boys in concert? My mom is laughing right now. I thought I saw the Beach Boys live. I was 5...I remember it to this day. Looking up thinking they were the REAL Beach Boys, not the live cover band at some Florida beach site. Whatev. They are still real to me.

Ironically, the first person to admit following my blog (well, officially clicking "follow") is my dear friend Julie who actually saw the REAL Beach Boys in concert a while back. Lucky girl. Aren't they great Julie? I saw them when I was 5 and thought they were fantastic. Oh wait.

You get the idea. I love my oldies. Good oldies stations don't come around these parts often. When I found 101.9 I was one happy camper. I was 5 years old listening to my sisters Supremes tapes in the closet again. Scott "Roddy" Records, the afternoon deejay at 101.9, knew his tunes. This guy was amazing. He knew everything about every song and made my drive home enjoyable. Then, out of the blue they tell us loyal listeners that their station was sold!

Whaaaaa?

They were being replaced by a new format (gag me) as of 6pm on September 15th. No night riders for these deejay's. They even had a farewell tribute show. I was still bummed. Royally bummed. Last night on the drive home they were playing the last of the oldies for Indy. I dreaded going to work this morning. What would be playing? Country? Repetitive "hits" from 1993? I was seriously upset about this. Then, it happened. I got in the car and the key. The radio was set to 101.9 from the night before. Out of my speakers came...

...Matthew West, "The Motions".

...Jesus loving Matthew West. And I thought, only the fuzzy 90.5 station plays this song. Could it be? Could it seriously be the station I have been longing to get in clearly? It was...

K-Love!

Seriously Lord? This is what I said. Seriously? You replace my oldies with K-Love? YOU ROCK LORD!!!

Our K-Love at 90.5 was so fuzzy. I desperately wanted "positive and encouraging" music for my drives, but could not bear the barely there frequency that only tempted me with joyful tunes.

I would have loved to have both a clear K-Love frequency and my beloved oldies. However, I have to say this was the best replacement ever. Clear encouraging upbeat Christian music. Yay! The K-Love deejays even did a morning shout out to the "new" Indianapolis frequency.

I miss you oldies and great 101.9 oldies deejays. I pray you will find awesome opportunities out there. Thanks for everything!

God is so interesting and creative. I never ceased to be amazed by His plan. Amazed and surprised.

The Liz Cake

Yes, this is it.

I did it.

I had to.

Well, I didn't have to, but I did. Gladly.

The Liz cake.

As in, my sister, Liz. Not to be confused with my friend, Liz. Although, Liz friend was the beautiful girly girl who led me to Classic Cakes so I owe her a debt of gratitude. So does my waist line. That is, if chubby is coming back in style. Oh, I hope so! This cake is SO worth chubby!



I had every intention of buy either the a.) prettiest cake in the case or b.) white on white. I love a good wedding cake and I usually prefer white on white to anything else. However, the nice lady behind the cake glass said that Pound Cake with Almond icing and Chocolate Truffle filling was there specialty. Oh my, was it ever! She let me sample a bite and oh mama, it was good! Moist, almond-y with a hint of chocolate. Oh me oh my! Cake heaven!

My dear Sis was overjoyed! She was seriously touched that I would buy her a cake. It wasn't her birthday, but it was a day to celebrate. My Sis and her hubby had never spent the weekend at our house before. What fun! It was so cute to see how excited she got. Even if she didn't read the Liz cake post. It didn't matter. We had a fun weekend, lots of laughter and CAKE. Amazing almond chocolate truffle pound cake!

Mmmm, delish! I couldn't get a good "bite" picture before I scarfed it down so this has to do.

Go buy yourself a Happy Birthday cake. It's Tuesday, you're worth it and God loves you! I think He blessed us with cake just to see goofy grins spread across our faces. I can't wait for the next non-event slight excuse to buy a cake from CC's.

Fresh Perspective

Tonight's dinner is brought to you by the student union. Patachou can call itself whatever it likes - I call it astoundingly wonderful. I do, and it is. This is the same compay as the Patachou from the cake post, but it's another offspring. The "we're open for dinner" offspring. Petite Chou is definitely in the ranks of favorite dinner spot in Indy. It is a close second to Jasmine and at times may be the front runner. I asked Mr. Schalk for a "fresh" restaurant and boy did he deliver. Perfect suggestion, Mr. Schalk!


Hello green tea. You are fruity, fresh and not-too-sweet. Thank you for refreshing me while I wait for Mr. Schalk to contemplate the menu in its beautiful entirety. Can you blame the man? This menu has about a gajillion choices that all tantalize the taste buds in their own special way.

Fresh, local at times and all together complex. Yet, also very light. My taste buds are still watering. It took a while to figure out our menu, but when the Kevin Pereira look-alike waiter finally came back we were ready. He was a cool dude and gladly took our order.


Yes, please.

For Mr. Schalk, Salade Niçoise. "A seared tuna steak, niçoise olives, baby potatoes, red onion and hard boiled egg on a bed of field green slightly tossed in our sweet vinaigrette." Oh baby!

To share, Duck Fat Frites. "Potatoes fried the authentic way in duck fat. Served with housemade aioli and Dijon mayonnaise." We are nothing if not authentic.

Fresh Berry Crêpe - A warm crêpe filled with fresh berries and crème anglaise, with a light sprinkling of vanilla sugar. Stop the train, I've found heaven.

Yes, I had dessert for dinner. I'm not ashamed. In fact, I planned it accordingly. Knowing the beautiful mixed fruit crepe with creme anglaise, was calling my name I wisely had the soup and tartine for the "regular" part of dinner.

The tartine was an open faced sandwich of house roasted turkey breast. You can see it up top on the left. Greens surrounded the freshest, thickest slice of roast turkey imaginable, which was set a top toasted french bread with herbed cream cheese, cucumber and tomato. Oh the flavors were divine! I love when restaurants use fresh quality ingredients and don't try to mask average with heavy sauces and fat. Okay, the crepe was laden with fat. But it was the fresh delicious kind. No regrets.

The soup was a late summer vegetable soup. I don't have a picture, but let me tell you it was adorable. Tiny zukes, corn and carrots swimming in a clear veggie broth. Tasty!
